You find the settings in the administration under Extensions → My extensions → Gift Registry & Wishlist → Configuration. Every setting applies per sales channel.
Activation
What does the setting "Gift lists active in this sales channel" do?
Master switch for this sales channel. Off hides every storefront surface of the plugin here - the "add to gift list" buttons, the public and account list pages, following and reserving - and its storefront routes stop responding. Admin, background tasks and existing data stay untouched.

What does the setting "Wish counts as bought at order state" do?
Once an order reaches this state, the wish counts as truly gifted and its quantity is finally reduced. Before that the wish is only held: blocked for others, but not yet counted as gifted. Recommended: "Completed".

What does the setting "Wish is released again after (days)" do?
While an order has not yet reached the state above (e.g. open, unpaid), the wish stays earmarked for it and nobody else can buy it. After this many days the earmark is dropped automatically and the wish is open to everyone again. 0 = never drops it (the earmark holds until purchase or cancellation). This has nothing to do with the reservations further down, which a giver makes deliberately without buying.
